Ingredients:- 1 cup rutabaga, cubed
- 1 cup butternut squash, cubed
- 3 tbsp olive oil
- 1 tsp salt
- 1 tsp pepper
- ¼ cup pumpkin seeds
- 3 oz of Woolwich plain chevrai goat cheese
- 2 cups of cooked quinoa (1 cup uncooked)
- 1 tbsp Italian seasoning
